Ingredients

  • 2 Eggs
  • 1 Avocado (ripe and creamy)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Lemon juice or vinegar
  • Salt and black pepper (to taste)
  • Optional Add-Ins:
  • 1 tablespoon Mayonnaise (optional, for extra creaminess)
  • 2 slices Bacon (cooked and crumbled)
  • 2 tablespoons Green onions (chopped)
  • 2 tablespoons Tomatoes (chopped)
  • 1 teaspoon Sesame seeds (for garnish)
  • A pinch of Paprika (optional, for flavor and presentation)

Instructions

  1. Boiled Eggs: Cook for 12 minutes for hard-boiled perfection. Cool, peel, and slice.
  2. Mash the Avocado.
  3. Scoop the avocado into a small bowl.
  4. Add a pinch of salt, black pepper, Dijon mustard, and lemon juice.
  5. Mash until smooth but still slightly chunky.
  6. Toast two slices of your favorite bread until golden brown
  7. Assemble the Sandwich.
  8. Spread the mashed avocado onto one slice of toast.
  9. Top with the sliced or prepared eggs.
  10. Add optional toppings like chopped bacon, green onions, tomatoes, and sesame seeds.
  11. Sprinkle with paprika for a finishing touch.
  12. Place the second slice of toast on top and press gently.
