The Ultimate Grilled Veggie Sandwich

Grilled Vegetable Sandwich

Ingredients

  • 1 red bell pepper, sliced
  • 1 yellow squash, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 2 portobello mushrooms, sliced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp black pepper
  • 1/2 tsp. cumin powder
  • 8 slices fresh mozzarella
  • 4 ciabatta rolls (or crusty bread)
  • Fresh basil
  • 2 tbsp coriander chutney (optional)

Instructions

1. Prepare Veggies

2. Grill Veggies: Grill veggies 2-3 minutes per side until tender.

3. Assemble Sandwich: Spread chutney on the ciabatta, layer grilled veggies and mozzarella, and add fresh basil.

4. Grill Sandwich: Grill until cheese melts and bread is crispy.

5. Serve: Slice and enjoy!
