Ingredients

  • For the Chicken
  • • 2 thin-cut chicken breasts or 4 chicken thighs (approximately 1 lb)
  • • 1 tsp. Italian seasoning
  • • 1/2 tsp garlic powder
  • • 1/2 tsp. kosher salt
  • • 1/4 tsp black pepper
  • • 1 tablespoon olive oil
  • For the Sandwich
  • • 4 ciabatta rolls (or other sturdy bread)
  • • 4 slices of fresh mozzarella cheese
  • • 2 juicy, ripe tomatoes, sliced into thick rounds
  • • 8-10 fresh basil leaves
  • • 2 tbsp. basil pesto (optional)
  • • 1 tbsp. pesto mayo (optional)
  • • 2 tbsp balsamic glaze or balsamic reduction
  • Optional Add-Ons
  • • Roasted red peppers
  • • Extra grated Parmesan cheese
  • • Lettuce or spinach for added greens

Instructions

1. Season and Cook Chicken: Season chicken with spices. Heat oil in a grill pan over medium-high heat and cook chicken 4-5 minutes per side (or until internal temperature reaches 165°F).

2. Toast Bread: Slice ciabatta rolls and toast until golden.

3. Assemble Sandwiches: Spread pesto or mayo on bread. Layer chicken, mozzarella, tomatoes, basil, and drizzle with balsamic glaze.

4. Optional: Grill the sandwich in a panini press or skillet for 2-3 minutes to melt the cheese.

5. Serve: Slice sandwiches and enjoy warm with your favorite side.
